Specialty cheese maker adding employees, space, and profit on the Lakeshore

The specialty cheese business is booming across the United States. And one West Michigan firm is at the center of the marketplace.

"I think the U.S. population is getting more and more used to specialty cheeses and we want to capitalize on that," Torben Siggaard, general manager of Tholstrup Cheese USA, Inc. in Norton Shores, told the Muskegon Chronicle.

Tholstrup Cheese has grown steadily since it was established in 1986. The workforce has quadrupled - from six to 24 employees - the plant space has nearly doubled - from 20,000 to 35,000 square feet - and total annual sales are close to $10 million.

"They're saying the U.S. cheese industry is where the U.S. wine industry was 10 years ago," Siggaard said. "Small wineries were popping up everywhere in California 10 years ago. Now, all of a sudden, they're competing with the French."
